One of the things we love about weekend mornings is being able to cook a nice hot breakfast and really take the time to eat it with a strong cup of tea before heading to the gym or getting on with our day. Unfortunately, this has become a bit of luxury and if you’re like us, some days breakfast is something you inhale before running off to a meeting or completing an urgent task. (And another thing: why do people schedule 9.30am meetings?) We’ve come up with a solution that provides nutrition, a caffeine boost and is pretty easy to knock back: The Date and Banana Latte.
This idea comes from our usual speedy breakfast – coffee/tea and a banana, but with dates (and you know how much we love dates) and date syrup for a bit more sweetness and fibre and yoghurt to keep us fuller for longer. It’s so easy, whipping up this thick smoothie (with a kick) takes hardly any time at all. Try it and you’ll see!
Makes 1 serving
1 medium banana, chopped
100ml cooled coffee (we used 1 heaped tsp of instant coffee and 100ml boiled water)
3 dates, chopped and soaked in coffee (above)
70ml skimmed milk
2 tsp fat free Greek yoghurt (optional)
1 tsp date syrup (or a sweetener of your choice)
- Blend together the above ingredients using a standalone or hand blender.
- Enjoy immediately for a nutritious breakfast on the go!
