Chocolate, Avocado and Banana Breakfast Pudding

January normally makes you want to retreat into your shell. You’ve eaten too much, you’ve certainly drunk too much and you’ve spent too much money. You’ve stayed up too late watching boxsets and you haven’t exercised. So in January, you vow to do the opposite. No chocolate for me, you say, I’m supposed to be good. In fact I’m on my way to the gym now, you say, clutching your protein shake, even though you really want a hot chocolate and an almond croissant to comfort you during this freezing winter.

We totally hear you. In fact, we’re currently doing the January dance ourselves – reluctantly going to the gym and then rushing back home to eat mountains of dates, pretending they’re Ferrero Rochers. (And then moving onto the Ferrero Rochers.) Don’t worry, we’ve  found something that LOOKS like yummy chocolate mousse but is full of nutrition! Turns out avocado, banana, peanut butter, cocoa and honey is a great combination which delivers protein, fibre, Vitamin E, potassium and with the addition of milk and yoghurt, calcium and iron! And it tastes gooooooood.

So when you feel like pudding, or a post-workout snack, make this! Hey, you can even have it for breakfast 🙂

Makes 4 servings

1 frozen ripe banana (or 1 banana and some ice)
1 ripe avocado
1 tbsp 0% Greek yoghurt
1 cup semi-skimmed milk
2 tbsp honey
4 tbsp unsweetened cocoa powder
2 tbsp unsweetened peanut butter

  1. Blend all ingredients together using a stand-alone or handheld blender. Feel free to adjust the ingredients according to your preference.
  2. Enjoy! (Yes there’s nothing else to it!)
